PB&J Pie

PB&J Pie

This is my third and final post for Project PB&J – a blogger cooking contest for National Peanut Butter & Jelly Day. Check out some of the other recipes for Project PB&J here!

Have you ever had something you couldn’t wait to get home and create? That was my sentiment when thinking about this pie.

I had been working up what I wanted my final entry into project pb&j to be. The strawberries in my fridge were calling my name.

The thought of a pb&j pie floated around my head. Sounds good..but how to put it together?

Peanut butter crust and fruity, jammy filling…why not!

Since I made this before my fluff, I poured that on top when it was fresh (and pourable). Viola! Fluffernutter pie! Fluff not necessary, but very very delicious.

This pie can easily be replicated with your favorite nut butter in the crust and what ever fruit you have available.

PB&J Creme Brûlée

creme brûlée

This is the second recipe I created for Project PB&J – a blogger cooking contest in celebration of National Peanut Butter & Jelly Day.

When I made my creamy peanut butter for the fluffernutters I decided to make some chocolate peanut butter as well. Why not?

There are so many delicious uses for chocolate peanut butter. You can eat it straight up, on toast, in a smoothie, in cookies, or ice cream.

But I wanted something different. Creme brûlée. Yes. Perfect! And another good excuse to use my culinary torch icon wink PB&J Creme Brûlée

Layer the creme brûlée with your favorite jam. Don’t be afraid to put more than you might think necessary. The tartness from the jam does a lot for the creme brûlée.

This recipe lends itself well to adaptations. Use any nut butter and jam or marmalade you have on hand.

Homemade Fluffernutters

fluffernutter

When I was initially invited to particpate in the pb&j cookoff in celebration of National Peanut Butter and Jelly Day I was elated.

I have a love affair with peanut butter. I am one of those people that eats it by the spoonful.

It is my favorite component in the classic peanut butter and jelly.

But when you wanted a real treat in your lunch, you didn’t go for a pb&j. Oh no. You went for a fluffernutter.

If you are anything like my boyfriend you are thinking, “what the heck is a fluffernutter?”

Let me tell you…it is quite the guilty pleasure. Sandwich bread smeared with peanut butter and marshmallow fluff. And just for good measure, a layer of sweet jam.

It is much better than it sounds. Trust me. I was skeptical – even at 10. But I obliged my cousins and gave it a try. Mmm I’m glad I did!

Today I’m sharing a homemade version of my guilty pleasure.

Instead of the traditional creamy store bought peanut butter I used my own homemade peanut butter, sweetened with a bit of honey, and homemade marshmallow fluff a’la BraveTart’s instructions.

You can make your own bread if you so desire. I recommend checking out this recipe. You can also opt for homemade jam. I didn’t this time, but if I could I would have used this recipe.
