Watermelon Mojito Pops {Holiday Recipe Club 5/25}

I have been wanting to try this recipe since I saw a link to it on Facebook about a month ago.

The title watermelon mojito pops was immediately intriguing. I figured, not much could go wrong with all of those things in one!

Lucky for me this holiday recipe club hop, in honor of Memorial Day, included watermelon as one of the ingredients.

As I was saying, one of the ingredients was watermelon.

Many say it’s still too early for watermelon but I beg to differ. Down here in South Carolina I found one of the best watermelons I’ve had in a long time.

Super sweet, juicy, and still crunchy. I hate when the watermelon is tasty but starting to get mushy…

Nutella Raviolis #PastaLove

It’s time for another love event!

I was so sad I wasn’t able to host the last one, but I was excited for this challenge.

Pasta is not something I do often. We don’t eat it that often and I definitely don’t make it often. But on top of all of that to make a sweet pasta? Oh boy.

I really wasn’t sure if I was going to make it through this one.

Originally I had envisioned making my own chocolate pasta dough and filling it with something tasty…it seemed like a wonderful idea. But again, time got away from me.

So instead of the super original sweet pasta idea I made a recipe that has intrigued me for years.

The first time I saw this recipe was a few years back on the Food Network. Giada and her mom were making them and they seemed perfect!

Chèvre Frozen Yogurt with Pistachio Crunch and Beet-Lime Ganache {Milk Bar Monday 5/7}

Welcome to another Milk Bar Monday!

This week we tackled our most challenging recipe yet. It was a multiple step process with weird ingredients.

It all started out a little rocky for me when I was looking through the recipe, trying to figure out what all I needed, and saw the pistachio crunch required pistachio nut paste and feuilletineUmm…what??

When I went to my local grocery store I knew there was no way they would have either one of these speciality items. As I was walking around I called all the health food stores, grocery stores, and kitchen supply stores in West Lafayette and Carmel.

No such luck with anything. After a quick google search I found I could make my own pistachio paste and substitute the feuilletine with corn flakes. No big deal…or so I thought!

Making the pistachio nut paste turned out to be super expensive (1 cup of pistachios at my store = $8) and not as easy as I expected. I actually overheated my Vitamix forcing me to use my little hand choppy thing and do it in small batches.

I also ended up having to add some green food coloring, otherwise it would have been a gross brown paste. So not appetizing. 

The beets took forever to roast to a mushy state and I was a little worried the ganache was going to break with the lime juice, but it luckily all worked out.

Watermelon Soup

Before you click away because this is something so completely unheard of on a sweets website, hear me out! 

My friend Keely over at Gormandize with A-dizzle and K-bobo is hosting a vegan soup hop this week and I thought that sounded like the perfect challenge for a sweet baker.

In my daily life I’m pretty much as far as I can be from vegan – eggs and bacon for breakfast, turkey sandwiches or ramen for lunch, meat and potato type dinners….and of course baked good after baked good.

But all of us need some balance in our lives so I figured this was a good place to start.

Watermelon is one of my favorite fruits. I love it. It totally reminds me of being 5 and having seed spitting contests in the summer.

After a bit of consulting with friends on Twitter I was inspired to make a soup with gazpacho type flavors. After ripping through all my cupboards I realized I didn’t have anything gazpacho like!

Homemade Fluffernutters

When I was initially invited to particpate in the pb&j cookoff in celebration of National Peanut Butter and Jelly Day I was elated.

I have a love affair with peanut butter. I am one of those people that eats it by the spoonful.

It is my favorite component in the classic peanut butter and jelly.

But when you wanted a real treat in your lunch, you didn’t go for a pb&j. Oh no. You went for a fluffernutter.

If you are anything like my boyfriend you are thinking, “what the heck is a fluffernutter?” 

Let me tell you…it is quite the guilty pleasure. Sandwich bread smeared with peanut butter and marshmallow fluff. And just for good measure, a layer of sweet jam.

It is much better than it sounds. Trust me. I was skeptical – even at 10. But I obliged my cousins and gave it a try. Mmm I’m glad I did!

Today I’m sharing a homemade version of my guilty pleasure.

Instead of the traditional creamy store bought peanut butter I used my own homemade peanut butter, sweetened with a bit of honey, and homemade marshmallow fluff a’la BraveTart’s instructions.

You can make your own bread if you so desire. I recommend checking out this recipe. You can also opt for homemade jam. I didn’t this time, but if I could I would have used this recipe.
