Happy Cinco de Mayo!

Today is another one of my favorite holidays. Why, you ask?

Well who doesn’t like to eat copious amounts of guacamole and drink too many margaritas?

For this Holiday Recipe Club I decided the ingredients would be chorizo, dulce de leche and tomatoes.

As you can see, I decided to use dulce de leche. It reminds of the first time I went to Mexico.

They had these candies at the hotel we were staying at. They tasted like dulce de leche but were chewy like caramels. Anyone know what I’m talking about?

Anyways…this tart is creamy, nutty, crunchy, and all sorts of deliciousness. But be warned, it is rich!

Half a piece of this stuff and I was satisfied. Maybe a tart margarita or spicy chorizo taco will cut the richness?

Pumpkin Cupcakes + Dulce de Leche Frosting

I know it’s getting to be that time in November when pumpkin recipes come in all forms.

A few of my favorites have been this pumpkin apple soup, white chocolate pumpkin cups, pumpkin waffles with cream cheese syrup, skinny pumpkin pie cups, and mini pumpkin bundts.

It’s pumpkin recipe war out there!

So, to stay in the pumpkin mood I have a super simple pumpkin cupcake recipe for you from Annie’s Eats.

The cupcake is very light, moist, and so tender. Melt-in-your-mouth tender.

Caramel Pear Ice Cream with Homemade Butterscotch

If you follow me on Twitter you know my lovely boyfriend bought me a KitchenAid Ice Cream Maker attachment for my birthday back in August. He was also sweet enough to buy me David Lebovitz’s book The Perfect Scoop.

After flipping through the pages I saw so many different recipes I wanted to try. Roasted banana, Goat cheese, Matcha, and Mango sorbet were the first to catch my eye. After looking through the book a few more times, I was interested in the Pear-Caramel Ice Cream.

I wasn’t quite sure what to expect from pear ice cream but it sounded good enough. And it seemed fitting for the first fall inspired ice cream.

In the book David recommends pairing the ice cream with dulce de leche. That got me thinking…maybe I should make some sort of sauce. I flipped through the Ben & Jerry’s Ice Cream book to the homemade butterscotch recipe. Easy enough, and the type of recipe where you already have the ingredients!

I chose butterscotch because it is my boyfriend’s favorite. You could use any caramel sauce recipe you like, it would be equally as delicious. 

It was a delectable addition to the ice cream. Next time I want to add a little whipped cream and chopped walnuts to make the perfect date night dessert.

Dulce de Leche Shortbread Cookies

The last time I went grocery shopping I happened to stumble across something wonderful…dulce de leche. It can be found fairly easily, but I had never seen it at any of my grocery stores until recently.

I had had it for the first time a few years ago when I was in Mexico. It was in the candy form and they called it cajeta.

For those of you who have had dulce de leche, you already know how amazing it is. If you haven’t had it before, run to your closest store and look for a can!

I found this in the ethnic foods isle. Dulce de leche is a caramel candy and spread. It can either be bought like this, or you can make it yourself!

Dulce cookie bite 2 Dulce de Leche Shortbread Cookies

Dulce de leche is one of those things that once you start eating it you can’t stop. It’s thick, creamy, sweet, and totally addicting.

All of those things made me want to do something completely opposite of that with it. And I found this delicious recipe that uses a shortbread cookie base. I highly recommend it!
