I made these candied cranberries last year after seeing them on A Spicy Perspective.

Sommer shared this super simple and gorgeous recipe with us and I just couldn’t pass it up.

I knew the combination of sweet and tart would be dangerously addictive. As soon as she said they were like natural sour patch kids I was sold.

After my great success with them last year, I made them asap this year.

My boyfriend loves them too, so he was happy to have them return to the kitchen!

But these cranberries aren’t just for Thanksgiving. Oh no.

You will want to make them for Thanksgiving, Christmas, New Years and any other time you can find fresh cranberries!

This recipe also leaves some wiggle room. You can switch out the extracts for the flavors you like, or think might go well with cranberries.

Last year I used coconut extract and I found it a little overpowering. This year I scaled it back on the coconut, added more orange liqueur and the insides of a whole vanilla bean.

Now that we all have had a few weeks to finish the last of our Thanksgiving leftovers I have a few more cranberry recipes to share with you!

Most people I know only consider cranberries to be suitable for Thanksgiving. I am here to tell you that is wrong!

Fresh cranberries are delicious and should be on your table more than once a year.

Cranberries are pretty and festive, and that bright red color is perfect for the holidays.

They also pack a punch! Cranberries are full of Vitamin E, Vitamin K, and Vitamin C. They are also a good source of Dietary Fiber and Manganese.

I made this for our Thanksgiving dinner and it was a big hit. The maple syrup gives it a nice touch of sweetness with out taking away too much tartness from the cranberries.

Cranberry and Macadamia Nut Shortbread Bars

What could be better then a crispy shortbread cookie paired with white chocolate? (Not much!)

But, I added some macadamia nuts and fresh cranberries to see if I could changes things up. It turned out totally delicious!

I know a few people that are die hard white chocolate macadamia nut cookie fans…

When I worked at Blondie’s, the white chocolate mac nut had a dedicated customer base. The people that came for them rarely bought anything else.

Personally, I love the cranberry bliss bar from Starbuck’s.

But nothing beats a homemade cookie, so I decided to make my own version of the delicious treat at home.

The bars consists of a classic shortbread cookie topped with chopped fresh cranberries and melted white chocolate.

Meyer Lemon Cranberry Scones

Once I had discovered I liked fresh cranberries, I stocked up. Fortunately cranberries keep very well, so I made sure to buy plenty just in case I had a sudden cranberry craving.

Not long after I had bought the cranberries did I find myself wanting to bake something delicious….

I pondered what would go well with the cranberries. After thinking about some of the flavors I used in the candied cranberries, I decided to go with something citrusy.

I went with scones because I recently made some organic pumpkin scones that went over well. There are so many different varieties of scones, and they are so conveniently sized!

I made a huge batch of these scones and sent some home with my boyfriend over Thanksgiving. Everyone seemed to really enjoy the bright flavor from the Meyer lemon zest and fresh cranberry combo.

And you would not believe how long they kept the fresh baked smell.

How to Make Candied Cranberries

Cranberries seem to be the quintessential holiday flavor. I saw them everywhere this past Thanksgiving.

I do admit, they provide a great tart flavor contrast to savory dishes like stuffing & biscuits while also cutting the sweetness in desserts like pecan pie.

And how can you beat the beautiful bright red color!

I have always loved dried cranberries. I can eat crasins almost non-stop and cranberry sauce is my favorite thing about Thanksgiving.

But, this was the first Thanksgiving I have ever bough whole, fresh cranberries.

I’m so glad I decided to try something new. My sister made fresh cranberry sauce, and I made candied cranberries.

We both agreed the sauce was the best we have ever had, and the candied cranberries are going to become a new holiday tradition.

If you have never had a cranberry in its close to natural state like this, you should try this recipe immediately. The tartness from the cranberries is not at all overwhelming, and they are just sweet enough to feel like a treat.

I made them two different ways, once with orange liqueur and once with coconut extract. Both recipes were absolutely delicious.

If you are going to be serving these to children, you might want to use something like coconut extract. I think orange extract would also match the tartness of the cranberries well. [Read more...]
