It’s time for another Holiday Recipe Club! Today is our first post focused on an international holiday and that holiday is Buddha’s birthday.

My friend Keely over at Gormandize with A-dizzle and K-bobo was kind enough to help me come up with the international holidays and ingredients. I was happy she was able to help me with this challenge because as much as I don’t like to admit it, I am totally clueless about international holidays (hopefully that will change soon!)

She suggested that for Buddha’s birthday we use garam masala, tofu or sesame. All of those ingredients sounded pretty wonderful to me so we went ahead and told the rest of the club what was up.

These ingredients are a little bit more challenging than usual, but I couldn’t wait to see how creative the rest of the club would get with a new holiday.

I decided to go with sesame paste, aka tahini. I had been thinking a garam masala yeast bread would be divine but between a failed hard drive and upcoming finals I worked with what I had.

These shortbread cookies are super quick and easy. I even was able to make them before class on Friday!

The tahini adds a wonderfully nutty, almost peanut buttery, flavor to the shortbread as well as making them extra flakey.

Compost Cookies {Milk Bar Monday 4/23}

What does the word compost usually make you think of?

Not cookies…right?

Well from now on, it should! Why? Because these are some of the best cookies out there.

Miss Tosi has done it again. Her wonderful book, Momofuku Milk Bar, constantly challenges my baking beliefs. I’m not sure if any one recipe has as much as this, though.

What kind of cookie have you ever tasted includes things like ground coffee, pretzels, potato chips, and butterscotch chips? Not to mention usual things butter, flour, oats, and chocolate chips.

Before you click away in disgust or give me the same doubtful look my mom did, hear me out! The coffee is subtle (even when I doubled the amount called for), the chips add some saltiness (otherwise you wouldn’t have known they were there), and the pretzels offer some body and crunch.

The best part of this recipe is it’s created for adaptations. It’s meant to use up the odds and ends in your cupboard. No chocolate chips? Use m&m’s instead. The possibilities are only as limited as your cupboard!

Crack Pie {Milk Bar Monday 4/9}

One of the first items I ever heard of in relation to the Momofuku Milk Bar was the Crack Pie.

Since the day I joined #milkbarmonday I have been looking forward to making the infamous pie. I must say, It does not disappoint!

You start off by making a thick and buttery oatmeal cookie. Good enough to replace your old standby oatmeal cookie recipe.

Crumble it up, mix it with butter and brown sugar and press it into a  pan. Then you fill the crust with a silky sweet custard-like mixture.

Bake it all up. Freeze it. Serve it cold with powdered sugar and escape into a sugarcoma.

PB&J Pie

This is my third and final post for Project PB&J – a blogger cooking contest for National Peanut Butter & Jelly Day. Check out some of the other recipes for Project PB&J here!

Have you ever had something you couldn’t wait to get home and create? That was my sentiment when thinking about this pie.

I had been working up what I wanted my final entry into project pb&j to be. The strawberries in my fridge were calling my name.

The thought of a pb&j pie floated around my head. Sounds good..but how to put it together?

Peanut butter crust and fruity, jammy filling…why not!

Since I made this before my fluff, I poured that on top when it was fresh (and pourable). Viola! Fluffernutter pie! Fluff not necessary, but very very delicious.

This pie can easily be replicated with your favorite nut butter in the crust and what ever fruit you have available.
