One of my favorite store bough cakes when I was growing up was angel food cake.

Top it with a little fresh fruit or whipped cream, or even in a trifle it is just heavenly.

This recipe would be good made as a regular angel food cake in a tube pan or angel food cake pan. But I decided to go with regular old cupcakes.

Angel food cupcakes were the perfect single serving size. Good for an easy dessert or tasty snack.

One thing I would change about how I made my cupcakes is my preparedness. I did not have my little stands positioned the right distance apart and ended up smashed a few of my cupcakes.

Crumb Cake

Do you have that one recipe from your childhood that you remember being “the best thing ever.”

And this is the recipe you would have done anything to get it so that you could enjoy your favorite thing over and over and over again. 

This crumb cake is that recipe for me.

At one time in my life I was a competitive swimmer. I swam for the local swim club and my high school.

My high school had required morning practices multiple times a week…it was brutal. But on every morning practice before a meet & every friday we had swim breakfasts.

The parents brought in the typical fare; biscuits and gravy, fruit, bagels, smoothies, casseroles…

But my friend’s mom made this crumb cake (we referred to it as crack cake) that was out of this world. She swore she would never give up the recipe but she finally decided to add it to her blog, making me one happy baker.

This is a basic coffee cake but it’s the perfect base to fruit, nuts, or chocolate chips.

How to Make a Simple Themed Birthday Cake

At some point in your life, you may want to make a themed birthday cake, whether it’s a dinosaur cake for a child’s party or another type of themed cake to make an adult’s party more festive.

Themed cakes require a little more effort to prepare than typical cakes. When you’re making a themed cake, you have to spend some extra time cutting the cake out into a fun shape and decorating the cake.

If you’re going to make a themed cake, here are some of the things you’ll probably need to do: 

1. Bake the cake – Pick out what flavor cake you want to bake based on the preferences of the recipient of the cake. If you want to make a simple, vanilla cake, you can try out this recipe:

Carrot Cake {Holiday Recipe Club 4/5}

This time we were all required to use carrots, spinach, or eggs in our post.

When thinking about this time of year eggs, rabbits and chocolate always come to mind.

But other than the hordes of chocolate, carrot cake is my favorite Easter dessert.

I’ve made carrot cake in the past. They were fine cakes, but that was before I knew about the milk bar methods.

So, I made this carrot cake using some of Tosi’s tricks. Carrot cake is baked and circles are stamped out then layered with liquid cinnamon cheesecake. Then you freeze all that and cover it with cream cheese frosting. Decadent, right?

Next time I plan on adding a layer of oatmeal cookie crumbs or pie crumbs on top of each cheesecake layer. The crunchiness would be a nice touch with the cheesecake! [Read more...]

Pistachio Strawberry Cupcakes {Holiday Recipe Club 3/15}

It’s time for another edition of Holiday Recipe Club! Today’s theme is St. Patrick’s Day. The required ingredients for this hop included potatoes, pistachios and beer! Want to join the fun? Contact me here!

As I said, this hop’s theme is St. Patrick’s Day.

A few people jumped the gun and helped me pick the ingredients. It was so nice to have the suggestions! Keep them coming!

We ended up with potatoes and beer – to keep it Irish – and pistachios for something green.

There were a lot of inspiring Pinterest boards…it was hard to decide on anything.

I was tempted to go crazy with something like green beer, but I couldn’t resist a cupcake recipe.

These cupcakes are dense and reminiscent of muffins. The strawberry swiss meringue buttercream is not at all necessary, but a good way to sweeten the cake.

It’s also a great recipe to welcome spring!
