When I saw that Erin was looking for a guest blogger, I jumped at the opportunity.

However, when taking more time to think about what I would share I have to admit, I was a stumped. I mean, Erin is so creative when it comes to her baking and every single thing makes my mouth water. How could I ever make something that would interest her readers as much as the treats she makes?!

Well, I think I’ve done it. With Valentine’s Day coming up, I turned to a recipe that I made last Valentine’s Day that was red, festive, and downright delicious!

The Best Brownie Ever

Last week I was in desperate need of some chocolate. And I wasn’t interested in a candy bar…I was looking for something rich, chewy, comforting, and packing a chocolate punch.

Luckily, I logged onto Foodbuzz that day! I found a recipe for one of the best brownies ever. I mean ever ever. You will not find a better brownie. These have everything you need, and more.

You can make them as is, add a frosting on top (like I did), swirl some cream cheese into them to make cream cheese brownies, add orange or peppermint extract for a little festivity fun…see what I mean? Endless.

Boxed Brownies – BFB’s Way

As you all know, I am all for making my baked goods from scratch. But sometimes box mixes can be just as delicious.

This time I switched some things up. I decided to make the boxed mix a bit more interesting.

I added a mashed organic banana, chopped walnuts, swapped out organic virgin coconut oil for the vegetable oil, and sprinkled some chocolate chips on top.

I decided to try coconut oil in brownies because in my mind chocolate and coconut = Mounds like flavor. Unfortunately (or fortunately for those that don’t like coconut!) the coconut oil doesn’t add any coconut flavor to the brownies.

I still like to use the coconut oil over vegetable oil in my brownies. Coconut oil has way more health benefits then the traditional vegetable oil.

The little changes I made to the boxed mix turned out wonderfully. The brownie was light, but still fudgey. And it definitely felt like a sweet treat!

You can taste the banana but it is not an overwhelming banana flavor. And I thought the walnuts added a much needed texture change. And the chocolate chips are a must!
