A few months ago when some of us in the Milk Bar Monday group heard our friend Krissy was pregnant, we decided to plan a little virtual baby shower for her.

Since Krissy is having a boy and her husband is a baseball player we all tried to find some cute ways to incorporate those things.

I went with blueberries. And yes, I know blueberries are not exactly blue but I think you get the idea.

Blueberry Muffin Cake

One of the bf’s favorite baked items is a blueberry muffin. He told me to make them at least once this summer and I finally got around to it a few weeks ago.

I was feeling nice one day and decided to make a batch for him. About 20 minutes later the oven was preheated, the batter was made, but I couldn’t find a muffin pan!

The next best option was to make this in the 9×9 pan and go the crumb cake route. While this muffin cake is not as dense as a crumb cake it still pairs well with coffee for a sweet breakfast option.

Blueberry Pie

Blueberries are amazing.

Besides tasting so delicious, blueberries have many nutritional benefits.

  1. One serving = 14 mg Vitamin C (nearly 20% Daily Recommended Value)
  2. They are high in dietary fiber! Try to eat a handful a day to keep your heart healthy and cholesterol under control.
  3. Blueberries are full of antioxidants. You can fight free radicals all day long with a serving of blueberries.
And when it comes to baking, cooking, and eating blueberries the possibilities are only as endless as your imagination.

Blueberry pie, to me, is unique to summer. You can’t find a good blueberry pie in November. So when I saw blueberries on sale I bought twice the amount I had planned on. I knew right away I needed to make a blueberry pie.

My Second Guest Post at MadAboutMacarons.com & Chocolate Buttercream

As many of you know there is a huge royal event that has captured the attention of people world wide. To celebrate that event Jill at MadAboutMacarons.com has created some amazing macarons, and allowed me to do a second guest post for her.

This post includes my recipe for organic blueberry curd to fill your delicious blueberry macarons with. Please stop by and check them out, they are so beautiful and elegant.

You will love the blueberry twist on a classic curd. As Jill mentions in the post, blueberries are very healthy! Packed with antioxidants and tons of flavor, this blueberry curd is bound to become a favorite.

I thought I would join in on the macaron fun and make my second batch ever. I recently bought Jill’s book, Mad About Macarons, and I have been dying to make some.

In honor of love, I went with the chocolate shells and filled them with a chocolate buttercream.

I’m sorry to say I will not be sharing Jill’s macaron recipe with you, but I will give you the recipe I used to make the delicious chocolate macaron filling.

This frosting is very rich and chocolaty, which I thought was perfect for the macarons. But if you prefer less chocolate, just reduce the amount of cocoa powder used.
