Roasted Banana Ice Cream

This week has been full of strange things.

Tornadoes, thunderstorms, and 70 degree weather….In Indiana… and it’s barely even March!

But because it felt like spring, I couldn’t resist making ice cream.

As usual there were a few over ripe bananas sitting on my counter…banana ice cream it was.

Once again, The Perfect Scoop came to my rescue with this roasted banana ice cream. Even the roasted bananas are good enough to eat by themselves.

So, instead of using those leftover bananas in a smoothie, make this ice cream!

Note: I had a leftover sweet and salty brownie from the test batch I made. So I chopped it up and mixed it in. This ice cream lends itself well to mix ins.

Mardi Gras is the ultimate celebration.

A day of final sins (so to speak) before the fasting for lent.

Many people choose to participate in lent, others do it for religious reasons, and others simply love Mardi Gras celebrations (can you blame them?).

What ever you decide to do, it needs to be done with cake. Especially if that cake has 2 flavors! 

The required ingredients for this post were either bananas, bourbon, or andouille sausage. I chose to go with bananas.

They are one of my favorite fruits, and New Orleans is the home of bananas foster!

But, this cake is great because you can choose any 2 flavors you like. Get creative!

The results of a checkerboard cake are gorgeous and so much simpler than you may think. All you need is this checkerboard cake pan set and you are on your way!

Fruit Smoothies

This year I made the resolution to eat better.

I’m sure many people made similar resolutions, but what exactly does it mean to eat better?

For me it means not snacking mindlessly, eating a breakfast, and incorporating more fruits & veggies into my meals.

So far, it’s been really tough. Not snacking is easy, eating a breakfast is doable (but I usually forget), and eating more fruits and veggies is not easy.

But I’ve found the best way to both eat a breakfast and add more fruits/veggies is through smoothies.

A Vitamix Lesson

Sunday, before I started school for the spring semester, was intended to be a relaxing day.

My #SundaySupper  post was up, I had been productive, and the day was going smoothly. So I decided to make some smoothies with my Vitamix (lovingly named Blendy by the boyfriend).

Side note: This wasn’t the first time I had used a Vitamix … This wasn’t even this first time I had used Blendy. But the error I made was so silly you’d think I’d never touched a blender before.

This is what happened…

I happily made a cup of coffee, stirred in a tablespoon of sugar and 2 tablespoon unsweetened cocoa powder then let it chill in the refrigerator.

Then I chopped up 2 bananas and dumped them into the Vitamix, added the coffee, 1/2 a cup of milk and a cup of ice.

After I blended this to my hearts content I gave it a taste. The texture, thickness and flavor were perfect. So, I set up a little area on the counter to take a few pictures, grabbed a glass then went to move the Vitamix back a bit.

Organic Banana Bread (Revisited)

What is the first thing you think when you have a few bananas starting to turn brown?

I think, banana bread.

Banana bread is one of my favorite recipes to both make and eat.

When I saw I had a few bananas starting to turn I had an instant urge to make bread.

But then I realized I had already posted about banana bread! What to do….

I thought back to the last time I made banana bread, and it had been awhile. This was the perfect time to remake last year’s recipe and make sure it still tasted as delicious now as it did then.

And because the base bread recipe is so easily adaptable, I decided to add drained crushed pineapple into the mix.

I noticed the can sitting in my cabinet and figured it would make flavor addition to the fruity bread.

This turned out to be one of the better banana breads I have made. The addition of the pineapple gave it a kiss of sweetness, while the coconut oil boosted the tropical feel of the bread. [Read more...]
