Roasted Banana Ice Cream

banana ice cream

This week has been full of strange things.

Tornadoes, thunderstorms, and 70 degree weather….In Indiana… and it’s barely even March!

But because it felt like spring, I couldn’t resist making ice cream.

As usual there were a few over ripe bananas sitting on my counter…banana ice cream it was.

Once again, The Perfect Scoop came to my rescue with this roasted banana ice cream. Even the roasted bananas are good enough to eat by themselves.

So, instead of using those leftover bananas in a smoothie, make this ice cream!

Note: I had a leftover sweet and salty brownie from the test batch I made. So I chopped it up and mixed it in. This ice cream lends itself well to mix ins.

Banana & Lemon Checkerboard Cake {Holiday Recipe Club}

Piece of Cake

Welcome to the Mardi Gras edition of Holiday Recipe Club! Interested in finding out more about the club, or want to join the fun? Contact me here!

Mardi Gras is the ultimate celebration.

A day of final sins (so to speak) before the fasting for lent.

Many people choose to participate in lent, others do it for religious reasons, and others simply love Mardi Gras celebrations (can you blame them?).

What ever you decide to do, it needs to be done with cake. Especially if that cake has 2 flavors!

The required ingredients for this post were either bananas, bourbon, or andouille sausage. I chose to go with bananas.

They are one of my favorite fruits, and New Orleans is the home of bananas foster!

Organic Banana Bread (Revisited)

What is the first thing you think when you have a few bananas starting to turn brown?

I think, banana bread.

Banana bread is one of my favorite recipes to both make and eat.

When I saw I had a few bananas starting to turn I had an instant urge to make bread.

But then I realized I had already posted about banana bread! What to do….

I thought back to the last time I made banana bread, and it had been awhile. This was the perfect time to remake last year’s recipe and make sure it still tasted as delicious now as it did then.

And because the base bread recipe is so easily adaptable, I decided to add drained crushed pineapple into the mix.

I noticed the can sitting in my cabinet and figured it would make flavor addition to the fruity bread.

This turned out to be one of the better banana breads I have made. The addition of the pineapple gave it a kiss of sweetness, while the coconut oil boosted the tropical feel of the bread. [Read more...]

Organic Banana Cupcakes

Banana Cupcake Upclose-2

This weekend my roommate was going out of town and had a bunch of bananas that were starting to over ripen. She told me I could bake with them if I wanted to instead of her just throwing them away.

Of course, I took the bananas. Can you imagine me passing up the opportunity to bake?

I pulled out this recipe that I have had around forever, but never really had the chance to use.

This banana cupcake recipe is very similar to the banana cookie recipe, but not quite as hearty or chewy.

The cupcakes have a very light and fluffy texture. The banana flavor is powerful. And when paired with the sweet chocolate frosting, to die for.

Organic Banana Bread

Organic Banana Bread

Recently, when I was home visiting my parents my dad asked me to make one of his all-time favorite baked goods…banana bread. I happily agreed, who doesn’t love banana bread?

Before I started, I was trying to think of ways to make mine different but still keep it close to the kind of banana bread that my dad knows and loves.

I did a little research on recipes and read that a lot of people like to add nuts such as cashews, macadamia nuts, pecans, and walnuts.

I also read of people adding chocolate chips, peanut butter, dried fruit and frosting. All that sounded good to me, but I knew my dad wouldn’t want anything to get in the way of the banana flavor.

I decided to go with a little of orange zest, brown sugar, spices, and whole wheat flour for a heartier version of banana bread.

This turned out to be a crowd pleaser. Very similar to the classic banana bread recipe with an added orange aroma, and a bit of a caramel-y flavor. The whole wheat flour also gives the bread a wonderful texture. [Read more...]
