Secret Recipe Club 5/16 – Strawberry Rhubarb Pie

I am so happy to announce that this is my first post for the Secret Recipe Club! This is a fabulous idea that I am so happy to be apart of. Basically, each member is assigned another participating blogger, and you are to choose a recipe from their blog to make for yourself. You can choose any recipe you want. This month I was assigned Ewa from the amazing Upon looking through her recipe index I found many, many things I wanted to make. She had so many beautiful recipes, but I ultimately went with her strawberry rhubarb pie. This is a baking blog, and I wanted to keep things on the sweet side.

I chose this recipe for a few reasons…

  1. I have never made a strawberry rhubarb pie before, and this was the perfect chance to have one at my disposal.
  2. Rhubarb is in season right now.
  3. My bf had never had a strawberry rhubarb pie before, and I had to change this IMMEDIATELY.

If you are new to rhubarb you should know a few things.

You can not eat the leaves! Grocery stores typically do not sell the stalks with the leaves so this shouldn’t be an issue…it’s just something to keep in mind.  And it is very, very tart. Hence the reason why it pairs perfectly with sweet strawberries.

If you like things on the sweet side, stick with the strawberries in your pie. If you like things tart, try only using rhubarb for a fun spring pie.

I decided to switch things up a little with Ewa’s recipe. I added a little ginger into the filling, and instead of the traditional 2 crust pie I went with a crumble topping. Either way, the pie is fantastic.

You can use my pie crust recipe that I recently perfected. If you haven’t made your own crust before I encourage you to try! The results are much better then anything you can buy pre-made from the store.


  • 1 1/4 cups
  • 1/3 cup organic flour
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 2 cups quartered organic strawberries
  • 2 cups sliced rhubarb (I just estimated, and used about 3 stalks worth)
  • 2 tbsp butter, cut into small pieces


  • 1/2 cup cold organic unsalted butter, cut into cubes
  • 1/2 cup organic flour
  • 1/4 cup organic white sugar
  • 1/4 cup organic brown sugar
  • 1/2 cup rolled oats

To Make the Pie

  1. Pre-heat the oven to 400º F and make the crust.
  2. Roll out the crust to about 9 inches, and lay in your pie pan. Bake for about 10 minutes.
  3. In a large bowl combine the 1 1/4 cups sugar, flour, and spices. Cut up the fruit and mix into the dry stuff, coat evenly.
  4. To make the crumble topping: simply  mix together the flour, sugars, and oats and cut in the butter. It should form large crumbles that stick together.
  5. Pour the filling into the baked crust, and dot with the 2 tbsp butter. Top with the crumbles and bake for about an hour, or until the filling is bubbly and the top is nicely browned.
  6. Allow the pie to set (and cool) for at least an hour before serving.

The day after I made the pie I went home for the night. When I got back to my apartment the next day, I found the pie destroyed. My BF couldn’t even wait to dig in, and completely devoured the pie. I knew this would be an addicting pie…

  1. WOW strawberry and rhubarb pie! Looks amazing. I am very much in to rhubarb and have been baking a lot with it. Never tried a pie with both rhubarb and strawberries so must give it a go. Like the idea of a crumb topping.

    I love rhubarb pie. I have had both strawberry rhubarb and plain rhubarb and they both are very yummy in their own right. I used to have a rhubarb patch out back of where I lived. So sad we won’t be around to collect any this year. I’ll have to tell my son to make sure he uses it! (he lives there now and we live 4 hours away!)

  13. OK, my MM and I were just talking about this very pie yesterday. He has never had one so, I believe this would be a great one to cure his Strawberry-Rhubarb Pie virginity. This will be happening tomorrow.

    Lucky You! We used to use rhubarb in desserts when I lived in Pa. Now that I live in NC, I can’t find it anywhere. I love the tartness of it. MMM!

  17. I was buying groceries the other day and the rhubarb caught my eye and even though I wanted to take it home, I wasn’t sure what I would make with it. Now I know! I am sure the tartness of the rhubarb and the sweetness of the strawberries must have been a divine combination! Bookmarked the recipe!

  24. OHHH I am so glad you picked one of my favorite recipes!!!! I am a huge fan of rhubarb and friends always bring me rhubarb at work since they know how much i love it. Usually i make this pie ONCE or i just eat the whole thing and then i just make rhubarb sauce and put it over my yogurt in the morning. Or just eat it as is for dessert. I have no idea why – but i can eat tons of rhubarb the flavor is just so good to me. But now i know that i am going to do your crumble next time. I love that you added ginger too.       MMM…rhubarb sauce sounds fabulous. I know what you mean by eating the whole thing, I could definitely do that! I’m trying to find as many reasons as I can to buy rhubarb before it goes out of season. This is one of the first years I have ever really baked with it!

  26. Can you believe I’ve only ever had rhubarb once? my mom never cooked with it, so I don’t know what to do with it, and I’ve only eaten it once elsewhere. I liked it, but my DH hated it with a passion… so I think this is once recipe I’d better not try;) It looks yummy, though!

  29. I used to have rhubarb in my yard. It grew up next to an apple tree and I thought is a pain in the you know what. Now I wish it was there…but I’ll instead have to live vicariously through you. Looks and sounds delish1

    You have finally tempted me enuf to go and get some strawberries (fresh from the field) and some rhubarb. I will cheat and buy an already made crust (you know my probs with that) and make up a pie this weekend. I don’t need the calories but I can’t resist. Mom also loves this pie so I will give most of it to her to share with her friends. I will let you know how it turns out.
