Strawberry Lime Tart

As you know, I have a curd obsession. I seem to have subconciously convinced myself to taste (and make) every flavor of curd.

The few days I was home before moving down South I helped my mom start some lemon lime curd bars. I made this bright green lime curd using Nutmeg Nanny‘s recipe.

This stuff is so good. I think it’s better than lemon curd. I liked it so much I wanted to make some for myself. But I knew that having a jar of curd sitting around is dangerous. It would be gone in a few hours, maximum.

To provide myself an easier way of eating the curd, with out eating it straight from the jar I made a tart. Using graham crackers, a little sugar, and an egg white I made a slightly salty and crunchy crust to fill with the curd and top with something else delicious. But, instead of topping it with whipped cream and more sugar, I went the au naturale route with organic strawberries.

I had the idea to top it with strawberries from strawberry lemonade. I figured if strawberries and lemons tasted delicious together, strawberries and lime was a no brainer.

This tart is amazing. The strawberries and lime curd pair perfectly, and the slightly salty crust provides the perfect balance to the tart curd.

Strawberry Lime Tart

Graham Cracker Crust

Ingredients:

  • 1 3/4 cup graham cracker crumbs (maybe make your own graham crackers? YUM)
  • 1/4 cup sugar
  • 6 tbsp butter, melted
  • 1 egg white
  1. Pre-heat oven to 350ºF
  2. Crumble up graham crackers using about 1 1/2 packages of crackers. Mix in the sugar.
  3. Mix in the butter and egg white.
  4. Press into the bottom of tart pan and bake for 10 minutes. Allow to cool completely before filling with the curd.

Lime Curd

Recipe from Nutmeg Nanny

Ingredients:

  • 1 stick (1/2 cup) unsalted butter
  • 3/4 cup sugar
  • 1/2 cup fresh squeezed lime juice
  • 1 tbsp lime zest
  • pinch of salt
  • 5 large egg yolks

To Make the Curd:

  1. Melt butter over medium heat, and remove from the heat once fully melted.
  2. Add sugar, lime juice, zest and salt. Whisk all together well.
  3. Add the yolks and whisk until smooth. Then return the saucepan to the stove top and start cooking over low heat, whisking constantly. Gradually increase the heat while continuing to whisk.
  4. The curd is done when it has thickened enough to cover the back of a spoon (about 10-12 minutes of cooking time).
  5. Remove from the heat and allow to cool slightly. Then pour into a container (or on to tart crust) and allow to cool in the refrigerator overnight and thicken to curd consistency.
  6. Then top with sliced strawberries and serve.

  1. How could you resist eating the whole thing? I really miss being able to buy graham crackers. There are cookies here that are sort of similar but nothing REALLY can duplicate the taste and texture of a graham cracker. I might have to try making my own. :)

    This tart is too pretty to eat but I’d be happy to sacrifice myself for the job.
