Sorry I’ve been absent lately!
After moving back to Purdue from my summer job I headed down to Guatemala to help build a soccer field.
Now I have a few days at Purdue before driving around the state to celebrate mine & the bf’s birthdays.
With one of my days I was able to make this grapefruit pie.
I was happy our next recipe was good for hot weather, I was so not in the mood to turn the oven on for too long.
This pie has a nice balance of textures – sweet and creamy filling vs a crunchy crust. It does call for one ingredient that I wasn’t able to find anywhere near me, passion fruit puree.
Since the only way to buy it was for $$$ I decided to replace it with pineapple puree. I thought it tasted pretty good, but I would have much preferred to use the passion fruit. If you can find it (or want to order online) go for the passion fruit!
The other change I made was to use pink food coloring instead of red. And I used a bit too much of my gel food coloring making it a crazy bubblegum colored pie.

Interesting….I’ve never heard of a grapefruit pie. Now you have me intrigued on how it would taste. Hmmm….
It’s worth trying! But honestly, even if you don’t make the whole pie I recommend trying the Ritz crust at least once

Wow you are busy! The grapefruit pie sounds amazing! I have been looking for passion fruit and its so hard to find. I had it last month when I was in Paris. What an amazing fruit!!
