Before you click away because this is something so completely unheard of on a sweets website, hear me out!
My friend Keely over at Gormandize with A-dizzle and K-bobo is hosting a vegan soup hop this week and I thought that sounded like the perfect challenge for a sweet baker.
In my daily life I’m pretty much as far as I can be from vegan – eggs and bacon for breakfast, turkey sandwiches or ramen for lunch, meat and potato type dinners….and of course baked good after baked good.
But all of us need some balance in our lives so I figured this was a good place to start.
Watermelon is one of my favorite fruits. I love it. It totally reminds me of being 5 and having seed spitting contests in the summer.
After a bit of consulting with friends on Twitter I was inspired to make a soup with gazpacho type flavors. After ripping through all my cupboards I realized I didn’t have anything gazpacho like!
So I stuck to what I know – sweets.
This watermelon soup is a good start or end to any meal. I could even eat this as a snack on a hot day.
For the non-vegans out there this would be good as a main dish component with grilled shrimp or fish and a light salad.
I can see myself making this many more times over the next few seasons. It’s quick, takes very little clean up, and you feel good after slurping it all down!

Watermelon Soup
Ingredients:
- 3 cups cubed & seeded watermelon- chilled
- a handful of mint
- 1 tsp ground ginger
- 2 tsp sugar (optional)
- 1/3-1/2 cup cold juice
- 1/2 lime worth of juice
To Make the Soup:
- Combine all the ingredients in your blender and blend for 10 – 15 seconds (depending on how much body you want and how awesome your blender is).
- Top with a few leaves of mint and a squirt of lime juice.
- Enjoy immediately!

There is NOTHING better on a really hot day than a chilled bowl of watermelon soup. I like a chilled lemon soup too but nothing beats watermelon. I’m a watermelonaholic I think. I don’t know if there’s a 10-step program for that but I probably need one.

I love gazpacho! I had it for the first time two years ago at a restaurant on the Chesapeake Bay and it was the best ever. I have to try your soup!!

This sounds absolutely delicious! I’ve never eaten a cold soup in my life but I do love how it fills you up and miss it in the summer (but wouldn’t dare eat hot soup during the summer-yuck!). This owuld totally fit the bill.

I used apple juice, but I think that a white grape juice would work well too!
