Cornflake Chocolate Chip Marshmallow Cookies {Milk Bar Monday 5/21}

You know what day it is…Milk Bar Monday!

Today our host is Averie of Averie Cooks and she picked the Cornflake Chocolate Chip Marshmallow Cookies.

So far, this is my favorite cookie recipe we have made from the book. The Compost & Confetti Cookies were definitely delicious, but the cornflake cookies were buttery and not too sweet. I couldn’t get enough of them!

They reminded me of a rice crispy treat and chocolate chip cookie combined.

I was particularly fond of the cornflake crunch. It was buttery, crunchy and strangely addictive.

My experience with these cookies was overall good…and very delicious, but here’s what I could do differently next time.

  1. Cream the butter, sugar and egg longer.
  2. Use weight instead of volume to measure the ingredients.

Nothing too drastic. My cookies spread a bit and I think this would make them set up better.

  2. Ooh I think your cookies look great! I love the gooey centers. It’s nice to know that we all were left with something to be desired w/ these right? I’d have been bummed if everyone else’s were puffy and perfect but mine. I guess these are just really spread-y cookies huh?

  3. Yes, definitely resembled a cross between a rice krispie treatand a s’more. LOVED the flavor, just definitely need to cream longer and use weight measurements. Your photos are excellent, Erin!

    O find that baking cookies on the Silpat? mat does this but when baking on parchement this does not happen.
    Had the cookie dough been sitting in the fridge first? I let me dough sit in the fridge for at least one day before baking, the flavours mature and increase the yummy factor.

      I think that this recipe just has a lot of butter in it. I (and all the other girls) found that the cookies spread a lot, even with refrigerating for 24-48 hours. I haven’t had the issue with spreading be specific to silpats though…interesting that you say that. The only thing I prefer parchment to silpat is macarons…those can be tricky and particular in their baking times and what not.

  8. I agree: your cookies look great, Erin! Similar to Audra’s with the gooey center and similar to Krissy’s with the crispy edges. This recipe was a bit of a challenge for all of us it sounds like, but I did enjoy the taste, if not the visual, of the final product!! :)
