You know what day it is…Milk Bar Monday!
Today our host is Averie of Averie Cooks and she picked the Cornflake Chocolate Chip Marshmallow Cookies.
So far, this is my favorite cookie recipe we have made from the book. The Compost & Confetti Cookies were definitely delicious, but the cornflake cookies were buttery and not too sweet. I couldn’t get enough of them!
They reminded me of a rice crispy treat and chocolate chip cookie combined.
I was particularly fond of the cornflake crunch. It was buttery, crunchy and strangely addictive.
My experience with these cookies was overall good…and very delicious, but here’s what I could do differently next time.
- Cream the butter, sugar and egg longer.
- Use weight instead of volume to measure the ingredients.
Nothing too drastic. My cookies spread a bit and I think this would make them set up better.
