For this swap I was assigned Debbi from Debbi Does Dinner… Healthy & Low Calorie. As usual I wasn’t sure where to start or what to make.

I was a little pressed for time between finals, moving down south and starting my new job. My goal was to find something that could be eaten quickly and that would use of some leftovers around my apartment.

As I was looking through her recipes I saw a fruit & berry crisp that sounded pretty wonderful and I knew it would be the perfect recipe!

This crisp does seem a bit out of season with the fruits I’m using but it tasted wonderful. And this recipe allows you to adapt whatever fruit you have or like.

I cut Debbi’s recipe in half, but honestly it was still a ton! I think it could even be cut down a little more if you plan on making this for 1-2 people.

You could even make mini personal crisps with ramekins — cutting down on baking time and proportion size — yay!

You should try a scoop of ice cream on top too… I used some left over chèvre frozen yogurt and its was out of this world!

Dulce de Leche Coconut Tart {Holiday Recipe Club 5/5}

Happy Cinco de Mayo!

Today is another one of my favorite holidays. Why, you ask?

Well who doesn’t like to eat copious amounts of guacamole and drink too many margaritas?

For this Holiday Recipe Club I decided the ingredients would be chorizo, dulce de leche and tomatoes.

As you can see, I decided to use dulce de leche. It reminds of the first time I went to Mexico.

They had these candies at the hotel we were staying at. They tasted like dulce de leche but were chewy like caramels. Anyone know what I’m talking about?

Anyways…this tart is creamy, nutty, crunchy, and all sorts of deliciousness. But be warned, it is rich!

Half a piece of this stuff and I was satisfied. Maybe a tart margarita or spicy chorizo taco will cut the richness?

Strawberry Rhubarb Hand Pies #SundaySupper

I am so excited to be participating in another #SundaySupper! It’s been a while since I’ve been able to join in on the fun, but this weekend finally worked out.

This #SundaySupper is focused on showers – as in baby and bridal showers.

This time of year is lovely for both of those things. So I tried to think of something “springy.”

My bf is a big fan of strawberry rhubarb pie and suggests it often. Strawberry rhubarb screams spring to me, so I decided to go with it this time and make little hand pies.

I like the half moon shape of the hand pies, but if you want a fun shape go for it! Hearts would be cute.

Crack Pie {Milk Bar Monday 4/9}

One of the first items I ever heard of in relation to the Momofuku Milk Bar was the Crack Pie.

Since the day I joined #milkbarmonday I have been looking forward to making the infamous pie. I must say, It does not disappoint!

You start off by making a thick and buttery oatmeal cookie. Good enough to replace your old standby oatmeal cookie recipe.

Crumble it up, mix it with butter and brown sugar and press it into a  pan. Then you fill the crust with a silky sweet custard-like mixture.

Bake it all up. Freeze it. Serve it cold with powdered sugar and escape into a sugarcoma.

PB&J Pie

PB&J Pie

This is my third and final post for Project PB&J – a blogger cooking contest for National Peanut Butter & Jelly Day. Check out some of the other recipes for Project PB&J here!

Have you ever had something you couldn’t wait to get home and create? That was my sentiment when thinking about this pie.

I had been working up what I wanted my final entry into project pb&j to be. The strawberries in my fridge were calling my name.

The thought of a pb&j pie floated around my head. Sounds good..but how to put it together?

Peanut butter crust and fruity, jammy filling…why not!

Since I made this before my fluff, I poured that on top when it was fresh (and pourable). Viola! Fluffernutter pie! Fluff not necessary, but very very delicious.

This pie can easily be replicated with your favorite nut butter in the crust and what ever fruit you have available.
