I was a little nervous this month. Looking through Janis’s recipes made me wonder if I could find anything sweet! This girl does not seem to have quite as large of a sweet tooth as me. She had many tempting recipes for savory dishes. There are quite a few I want to make for dinner! But after a little looking, I found this gem.

You know how I have a love of whoopie pies, so how could I pass up such a delicious sounding recipe? Pistachio…cardamom…orange cream cheese frosting… Wouldn’t you stop to look? As soon as I read through the ingredients list the deal was sealed.

This recipe is so fabulous and I am so glad she shared it on her blog. This whoopie pie is unlike any other whoopie pie I have had. The pistachio and cardamom work wonderfully together. If you love red velvet cake but don’t want to take the time to bake the layers, wait for them to cool, make the frosting, then frost the cake….don’t worry, you aren’t the only one. This is why people created cupcakes!

I love cupcakes. They are cute and fun, but I find them a little difficult to eat without making a huge mess.

Apple Whoopie Pies, My First Failure

When I was planning my whoopie extravaganza I had come up with two different recipes I desperately wanted to try.

The first was the pumpkin whoopie pies - which turned out fabulous! The second was an apple whoopie pie with a fluffy caramel filling.

You can imagine my excitement when the day finally came to bake the awesome sounding apple whoopie pies.

I wanted these to turn out amazing. So I read my recipe over, made sure I had all my ingredients, and set to work.

As you can see, things did not turn out as I hoped. I was so disappointed when I pulled the apple whoopie cookies out.

They were flat, ugly, and slightly crispy. These were not at all what they were supposed to be. I checked my steps, ingredients, and rechecked the recipe.

I have no idea what I did wrong. Fortunately, they still tasted pretty darn good. I skipped the frosting and we ate these in their messed up state. My friends didn’t seemed to disappointed in my little mishap icon wink Apple Whoopie Pies, My First Failure

If you are at all interested in making these, you should. The only problem I had with the recipe is they flattened too much to make into whoopie pies. They still taste great! You could always use some sort of frosting if you want to hide the appearance.

Just in Time for Fall, Pumpkin Whoopie Pies

This past week was the first real week of fall for me. And Fall is one of the best times of the year to bake.

The earthy flavors have a sense of homeyness, and rich aroma that can’t be beat.

Before I could decide exactly what to bake this week, I asked my friends on Facebook what their favorite fall flavors were. Their responses inspired me to make these easy and incredibly delicious pumpkin whoopie pies.

But first, do you know what exactly a whoopie pie is? They started as a Pennsylvania Amish tradition and spread throughout the New England area.

According to food historians, Amish women would bake these and put them in farmers’ lunchboxes. When farmers would find them at lunch, they would shout “Whoopie!”

Lately, I’ve been reading about how whoopie pies are about to replace cupcakes as the trendy new dessert. If this is true, I can’t wait to see the different gourmet flavors of whoopie pies!

I made a spiced cream cheese filling to go with my pumpkin whoopie pies. If you don’t have cream cheese on hand, a vanilla or chocolate filling would be amazing as well.
