Lavender Biscotti

After making the lavender shortbread a few months ago, I was inspired to use edible lavender more often.

Recipes like honey lavender ice cream and honey lavender creme brûlée were calling my name for weeks.

Once I finally got around to making something I settled on lavender biscotti.

I must admit, I was a bit underwhelmed by the thought of a lavender biscotti – but this recipe surprised me.

The biscotti are floral but not overwhelming. I also used organic turbinado sugar and organic coconut oil to make the biscotti softer and more like a cookie.

If you have never used lavender in any baked goods I recommend giving it a try! The lavender buds are pretty, smell good and add lovely purple flecks to your recipes.

Let me put your fears to rest. No, it’s not hard to make. Yes, it’s a bit time consuming but it is totally worth it when you taste the finished product!

Helpful hints: When I buy phyllo dough, I keep it in the freezer until I’m ready to use it. Then put it in the refrigerator the day before you will be using it.

That way, it defrosts slowly and evenly. Be gentle with it and every time you take a sheet of dough off the pile, make sure to put a towel over the pile to keep it from drying out. [Read more...]

Cornflake Chocolate Chip Marshmallow Cookies {Milk Bar Monday 5/21}

You know what day it is…Milk Bar Monday!

Today our host is Averie of Averie Cooks and she picked the Cornflake Chocolate Chip Marshmallow Cookies.

So far, this is my favorite cookie recipe we have made from the book. The Compost & Confetti Cookies were definitely delicious, but the cornflake cookies were buttery and not too sweet. I couldn’t get enough of them!

They reminded me of a rice crispy treat and chocolate chip cookie combined.

I was particularly fond of the cornflake crunch. It was buttery, crunchy and strangely addictive.

Cheese Straws

Have you ever had a cheese straw?

I didn’t even know what they were until I started doing a little research on 1960s snacks. We were watching The Graduate in one of my classes and I was asked to help make some 1960s themed snack foods for the week.

These cheese straws are more like cheese crackers (think Cheez-It) but are long and skinny.

Cheese straws were a common item found at dinner parties in the 1960s, especially in the South.

They are easy to eat, easy to share, and easy to make a lot of. I can see why they would have been popular!

The cheese straw dough can also be cut into a variety of shapes to compliment what ever type of foods or occasion you are having.

I recommend poking a few holes in your shapes if you choose to go that route, since they puff a bit when they are baked. You could also not and end up with fun puffy crackers.

I imagine anyone that likes the typical cheez-it would like these crackers, even with the added spiciness.
