S’mores Fudge {Secret Recipe Club 6/11}

smores fudge

Welcome to another Secret Recipe Club reveal day!

Today I am sharing a recipe from Heather at It’s Yummy to My Tummy.

When I was looking through her recipes I was excited to see there were so many different things I wanted to make. I bookmarked 4-5 different recipes but ultimately decided on the s’mores fudge.

It’s a super fast and easy recipe. I was also lucky enough to have all the ingredients I needed.

The final fudge was really delicious, but sweet. I could only eat one piece at a time (crazy, right?)

My final thoughts on the recipe: make it! It’s fast, delicious & perfect for a summer night with friends. [Read more...]

Candied Cranberries Revisited

Candied Cranberries

I made these candied cranberries last year after seeing them on A Spicy Perspective.

Sommer shared this super simple and gorgeous recipe with us and I just couldn’t pass it up.

I knew the combination of sweet and tart would be dangerously addictive. As soon as she said they were like natural sour patch kids I was sold.

After my great success with them last year, I made them asap this year.

My boyfriend loves them too, so he was happy to have them return to the kitchen!

But these cranberries aren’t just for Thanksgiving. Oh no.

You will want to make them for Thanksgiving, Christmas, New Years and any other time you can find fresh cranberries!

This recipe also leaves some wiggle room. You can switch out the extracts for the flavors you like, or think might go well with cranberries.

Last year I used coconut extract and I found it a little overpowering. This year I scaled it back on the coconut, added more orange liqueur and the insides of a whole vanilla bean.

If I would have had any lemon or orange extract I would have added that too!  [Read more...]

Coconut Candy Bars {Tropical Traditions Review}

Tropical Traditions Coconut Oil Recipe

Coconut oil is one of the most recent food trends to take the market by storm.

In 2009 people started whispering about the potential health benefits of tropical oils. Then they started to really want them. And now you can find coconut oil and palm oil just about anywhere.

But back in 2000, in a small community in the Philippines, a husband and wife worked together to make coconut oil the traditional way.

The founders of Tropical Traditions, Brian and Marianita Shilhavy, believe that the coconut oil is best when produced the way of the generations before them.

According to their website the process goes something like this…

“Grate the fresh coconut meat to extract the coconut milk…

Move the coconut milk to a covered container. Allow the coconut milk to sit for 24 hours…

After about 24 hours, the oil naturally separates from the water producing a crystal clear oil that retains the full scent and taste of coconuts.”

TTPicnik collage Coconut Candy Bars {Tropical Traditions Review}I have been a fan of Tropical Traditions for a few years.

In 2010 I jumped on the coconut oil bandwagon, and after doing a little research found TropicalTraditions.com. I read about their product and ordered a quart of their certified organic virgin coconut oil.

I was instantly hooked on the light coconut flavor and scent of the oil. I started using it for everything kitchen and skin care related.

So a few weeks ago when they offered to send me a quart of their certified organic gold label virgin coconut oil I was delighted!

For some reason I had never ordered their gold label before and I was eager to try it.

After looking through some of the different recipes on their website I found a Mounds like candy bar recipe that sounded good. I switched up the recipe a bit with the graham cracker crumbs & chocolate layer.

The Gold Label Virgin coconut oil was amazing. It was a bit more buttery in texture and had just a hint more coconut flavor. I highly recommend this one over their other oils, if you can afford it. If not their green label also wonderful!

Homemade Twix {Secret Recipe Club 11/14}

Homemade Twix

It’s that time of the month again… Secret Recipe Club! This month I was assigned Andrea of Adventures in All Things Food. Haven’t heard of Secret Recipe Club? Interested in joining? Get all the details here.

When I was looking through Andrea’s blog I found quite a few tasty recipes.

The ones that really caught my eye were her s’mores cupcakes with homemade marshmallows and the white chocolate panna cotta with raspberry gelee.

Once I saw the recipe for homemade twix I thought that sounded like a fun idea. I have seen other homemade candy recipes floating around. Mounds, Butterfingers, Peanut Butter Cups, and Snickers are just a few.

But buttery crumbly cookie + homemade caramel + melted chocolate? Yes please.

The recipe is quick to put together and turns out looking very impressive. These cookies would make a thoughtful homemade Christmas present. And although Halloween has passed, keep these in mind for your parties next year!

The recipe is fabulous as is, but if you want to change things up a bit you could add some salt and vanilla to the crust. You could also add some salt to the caramel (it is really delicious!). [Read more...]

Homemade Caramel Corn

caramel corn

Last week I saw something on Twitter I had never considered making before, homemade carmel corn.

Caramel corn makes me think of the boy scouts that use to sell popcorn in my neighborhood. I bought some from their popcorn sale every year.

One of my favorite things about caramel corn is the combination of salty and sweet flavors. It is so addicting!

If you find yourself craving a salty sweet snack, you should make this simple homemade caramel corn. It feeds the cravings and doesn’t take very long to make.

The recipe only calls for 7 ingredients, many of which you probably already have. And caramel corn can be made in the microwave, how great is that?! It’s GREAT if you need a quick snack.
