On to another week of things I love. Sorry it has been a few weeks since the last one. I have finally settled in to my new home for the summer, started working, and (of course) did some baking. I also want to give a shout out to The Peche and Snappy Service Cafe for awarding me with this awesome towel for BHF11PP!

But for now, enjoy some of my most recent favorites.

1. Mini Rhubarb Upside Down Cakes from Teenie Cakes – Upside down cakes are perfect for summer because they don’t need any topping and allow you to use whatever fruit is in season. I recently made a pineapple upside down cake, but these rhubarb cakes are calling my name!

2. Rhubarb Tart with Strawberry Whipped Cream from I (heart) Baking! — This one hit home for me. I recently made something similar, but this sounds so amazing. And the photos are beautiful. I want to try and make this tart with the rhubarb sliced long ways instead of little chunks. So cute!

3. Mini Gooey Chocolate Cakes from Bread and Milk and Blackberries — Who doesn’t love a good chocolate recipe? Nothing is more like home then a good chocolate cake. This one is Swedish. It is partially baked and more brownie like according to her post. Also, in her pictures she topped them with some frosting and berries making this a must try dessert.

4. Thai Banana Fritters from Tes at Home – Have you ever had something that was crunchy, sweet, hot, and fruity? I don’t have anything that immediatly comes to mind but that is essentially what you get from a banana fritter. Tes also mentioned pairing these wonderful treats with some vanilla ice cream. Doesn’t that sound amazing?

5. Strawberry Raspberry Rhubarb Pie from The Baker Chick — Another rhubarb recipe that caught my eye. I love that she made her pie a little different with the addition of raspberries. The tartness of the rhubarb and raspberries must pair perfectly with the sweetness of the strawberries. And her pie was bright and beautiful, great for a summer party!

Last week I did my first post on my “favorites of the week.” I really enjoyed sharing some of my favorite bloggers and recipes with you, so I decided to make this a weekly thing.

The inspiration for a “favorites” post came from the lovely Chef Pandita. She has a delicious link post on Mondays that I was lucky enough to be mentioned in. I thought it was a great idea, so I am starting a tradition of my own.

From now on, once a week I am going to share with you 5 of my favorite recipes from the past week or so.

And without further ado…

1. Steph’s Bite By Bite – Blueberry Pies in a Jar

These little personalized pies are so cute! I have been wanting to make my own pie in a jar for a long time. They are the perfect size, and would make a great gift. She also mentions not wanting to share dessert, and I completely understand. Dessert is the best part of the meal…why share?

2. Amy from Fragrant Vanilla Cake – Chocolate Red Wine and Olive Oil Cake

Amy made this delicious looking chocolate, red wine, and olive oil cake. Can you imagine how luscious, and moist this cake must be?? To top it off, she spread homemade raspberry jam in between the layers, and covered it in vegan chocolate frosting. I think this would be the perfect cake for a date night or anniversary. This cake is beautiful, and elegant.

3. Kate from Diethood – Peanut Butter Cups

Kate shares her take on a classic, peanut butter cups. I don’t know many people that can resist the combination of peanut butter and chocolate. I know that I can’t. When I saw her post on how to make your own at home I knew I was doomed. I love the addition of white chocolate and chopped nuts on top, great texture contrast!!

 

4. Kim from Liv Life – Margarita Lime Cheesecake

Kim made a wonderful margarita inspired cheesecake. I love cheesecake. The silky smooth texture with the crumbly slightly sweet crust…mmm… Kim really took it to the next level with the addition of tequila, fresh lime juice, and Grand Marnier. Her presentation is beautiful as well. She even made little cheesecakes for the perfect single serving size!

5. Megan from Foodalution – Organic Mango Hand Dipped Chocolates

Megan celebrated her health and 100th blog post with these beautiful hand dipped organic mango chocolates. I don’t know about you, but I have never attempted to make my own chocolates before. Her chocolates are so beautiful, and I am dying to make my own. I can only imagine the mess I would make with a project like that... But, I hope you are as inspired as I was after seeing the picture!

I apologize for my absence lately. I’m sure as many of you know/ remember this is finals time…

Time to buckle down and remember what my professors attempted to teach me, and what I (may or may not) have learned.

Instead of sharing one of my recipes, I thought I would share I have noticed around the internet. These are recipes that are just fabulous.

First, Lindsey from Gingerbread Bagels has been on a bit of an ice cream kick. She recently posted a recipe for an amazing looking funfetti birthday cake ice cream. It looks so fun, and I can only imagine how it tastes! Funfetti is one of my favorite cake mixes and makes me think of one of my good friends, Kelly. I know she will swoon over this recipe.

Second, Marnely from Cooking with Books posted an easy to follow tutorial on how to make your on cheese at home. It sounds so much simpler then I ever thought it would be. The possibilities with cheese making seem endless. This is something I have been interested in learning for a long time, and I want to try my hand at it as soon as possible.

Third, Lillian from Sweets by Sillianah has been doing a section on yeast doughs and recently posted a recipe for homemade bagels. I saw this and I was amazed! I am definitely a bagel fan, but I don’t eat them often. Her homemade recipe is sure to change my mind as I’m sure it will anyone with a fear of carbs.

Fourth, Vicki from Wilde in the Kitchen made a fresh and delicious sounding muffin with mango and lime. I don’t know about you but I am a huge tropical fruit fan. My parents taught me when I was younger to squeeze a little fresh lime on papaya and mango before you eat it to cut a little of the sweetness, so when I saw her amazing muffin recipe I knew it was a winner.

And finally, Maureen at The Orgasmic Chef recently posted a recipe for a candy that is completely new to me, Maine Needhams. Have you guys heard of these little chocolate covered confections? They incorporate potatoes, powdered sugar, and coconut to create a completely different type of candy. I really want to give them a try. I love new recipe ideas!
